Good morning people! It’s a beautiful sunny morning here and I’m loving that summer has final stay. This past weekend was eventful and Friday morning started as it normally does with a 4:20am wake up call for bootcamp. Little did I know that I’d be picking up a little friend…

Our bootcamp class was running a bridge back and forth- killer. But at the end of the last lap I found this little guy on the side of the bridge:

IMG_5856Someone had stranded him and he was laying on the side rail of the bridge. I immediately picked him up, put him in my shirt and ran the rest of the trip with him curled up with me. It was love at first sight.

IMG_5209I named him Meezmo after the kitten we found in Jamaica on our honeymoon:

I’m not sure if you can tell but he has an “M” on his forehead, between his eyes. That means he’s a Maine Coon.

The typical Maine Coon is 15-20lbs. He’s going to be big. Let’s hope not this big:

Yep, that’s a Maine Coon. Woof.

On Saturday night we met up with our friends Brittany & Matt to explore downtown Fairhope. We went to the Pelican Patio for dinner. They had a lovely outdoor patio which is another one of my favorite parts of Summer.

I enjoyed the Fish Tacos with a side of Sweet Potato Fries, so good.

IMG_5841They also had a live band playing music while we were there. Music + Outdoor Patio = Best Dinner

Afterwards we visited a new local brewery called Fairhope Brewery. Their wheat IPA was delicious.

We had a couple vs. couple darts tournament and then called it a night!

In other news… I turned my husband into a cat lover. He didn’t like cats before but now that Meez is in our life, he’s smitten. Smitten with a kitten.

New item I’m obsessing over lately:

Mrs. Meyers Lavender All-Purpose Cleaner makes your home smell like a dream and although this bottle is around $5-6, you get a lot for your money. You dilute the solution in a spray bottle and you will be able to clean your home without harsh chemicals and it doesn’t have the smell of some other “natural” cleaners. I’ve tried several that smell awful, this one smells amazing. I’m obsessed.

Speaking of obsessing, I used to have a really bad obsession with these crackers:

Back to Nature Crispy Wheat Crackers.

And by used to I mean, I still do. But I’ve just made an effort to skip that section of Publix and avoid them all together. Don’t even get me started on Wheat Thins. This months What I Ate Wednesday theme from Jenn @ Peas and Crayons is “Sensible Snacking”. How appropriate with my cracker obsession.

So I thought to myself, why not make my own non-processed crackers? Fresh from the oven. A healthy, homemade option.

Sea-Salt Crackers (Gluten Free)

  • 1 1/4 Cup of Brown Rice Flour
  • 1/2 Cup of Almond Flour
  • 1/2 tsp Garlic Powder
  • 1 tsp Sea Salt + some for sprinkling
  • 1/2 tsp Baking Soda
  • 1/2 cup Water
  • 1 tsp Olive Oil

Mix dry ingredients in a bowl. Add in Water & Oil and then mix with hands until it forms a ball of dough. Flatten out the dough on a parchment paper-lined baking sheet with a rolling pin. You want the dough to be thin enough so that the crackers aren’t thick but thin enough that the dough doesn’t tear apart. Then, using a pizza cutter, cut into squares like so:

Then sprinkle sea salt on top. Bake at 350 for 20 minutes. Let cool for 5-10 minutes and then enjoy!

Top with cheese, almond butter or coconut oil! Yum.

I tested Skinny Taste’s Crockpot Turkey Meatballs last night. Oh my, they were delicious.

I added them to a nice bowl of fresh Spaghetti Squash.

Let’s be real, Spaghetti is always about the sauce. Skip the heavy pasta and lighten this dish up with Spaghetti Squash. You won’t be disappointed. Unless you are the Spaghetti eater who only eats the noodles with butter on top. << Also muy delicioso.

That’s all folks! This post was a little winded but I had a lot to share with you!

Are you a cat or dog lover? Or both? What’s the one snack you have to avoid because you will eat it all the time?
