Good morning lovelies! So it’s been a hot minute… I have NOT been in the blogging mood lately. And when I’m not in the mood, I just go with it. I wait until I have the desire to again and then I’m back on. Not the best for those who like to follow but at least I’m honest 😉
Coffee has been a staple here in getting me back to the work week. Below is a re-cap for you of our latest adventures!
The past two weekends we were traveling to South Georgia & Gulf Shores. Both times for fun and it was a blast to get away. We first traveled to Darin’s home in Moultrie for his cousin Ada’s wedding.
We spent Friday evening & Saturday morning with his mom and stepdad on their farm. Their home is so relaxing and is always a great place to get away from the noises of big cities. Coffee on their back patio overlooking the field is my favorite spot.
Darin and I spent some time outside that afternoon as well. He hit golf balls and I ran around the field. I thought it would be nice but it was extremely hot.
I accidentally took this picture and laughed when I saw it because it’s exactly how I felt. If you ever want to get a quick workout in, do sprint intervals. Jog for 30 seconds and then sprint all out for 30 seconds. 10 minutes of this will do you, especially in the south Georgia heat.
I actually got sunburned from being out there, nothing like a good sports bra tan 😉
We then headed over to his dad and step mom’s house to get ready for the wedding! Look at this handsome man.
The wedding was a beautiful outdoor wedding at the local arts center. Surprisingly it wasn’t as hot as I thought it was going to be and the reception was indoor. The lovely couple looked so happy together!
We so enjoyed catching up with family and friends and headed back home Sunday afternoon.
To prep for our next trip to Gulf Shores, AL, I baked some delicious cookies that a few of you asked the recipe for. Now I will warn you, these are not “healthy” cookies by any means. I just subbed coconut oil for butter, reduced the sugar and subbed whole wheat flour for white. You could try other alternatives to make it healthier but these turned out yummy.
Coconut Chocolate Chip Cookies
(Makes 35-40 cookies)
- 2 Cups of Whole Wheat Flour
- 3/4 Cup of Shredded Coconut
- 1 cup of Brown Sugar
- 1 tsp of Baking Soda
- 1 tsp of Sea Salt
- 3/4 cup of Virgin Coconut Oil (room temp)
- 2 eggs
- 1.5 cups of Dark Chocolate Chips
Preheat oven to 350. Combine flour, baking soda and salt in one bowl.
Beat Coconut Oil, Sugar & Vanilla until smooth and then add in the eggs. After this mixture is combined, add in the flour slowly. Last but NOT least, stir in the chocolate chips. Drop by rounded tablespoons onto a un-greased cookie sheet. Bake for 9 minutes.
They may not look completely done when you pull them out of the oven, but they are. Let them cool and you will get around 35-40 cookies.
These babies turned out delicious. You can’t really go wrong with a chocolate chip cookie, but add in some coconut and I’m all there.
They did not last long at our beach weekend trip that’s for sure! Speaking of, last Friday we finished up at work and made the 1 hour trek down to Gulf Shores. It was actually close to 2 hours because of all the holiday traffic but we made it nonetheless.
The condo we stayed at was located next to the famous Florabama Bar. Bushwackers are one of their signature drinks so I immediately bought one and parked my butt in the sand with friends. 12 people in one condo= real world gulf shores. We had a blast.
I’m a sucker for the Gulf of Mexico. I grew up going to Pensacola Beach several times a year with my family and now living close to it is such a dream. I love it’s white sandy beaches and clear water. This was our view from the condo:

Friday night we made our way out to dinner for some seafood.
These were the boys of our group, I’m partial to the one on the far right 😉 I loved being at the beach with my husband.
Saturday Brittany and I found these America loving guys and had to get a picture with them. Note the WWE belt the man on the left is wearing, classic.
Saturday & Sunday were spent all day in the beautiful sun. The weather was PERFECT and we couldn’t have asked for better. There was a nice breeze which kept us all cool and we would occasionally go up to the condo for snack/lunch breaks.
Sunday afternoon Darin & I had to leave to get back for work Monday. We were sad to say goodbye but had a wonderful time with our friends Brittany & Matt and got to meet all of their friends below:

Now that we are back from a wonderful, food & drink filled weekend, it’s time to kick some butt in the gym and get back on track with clean eating. Lots of fruit and veggies are being consumed around here:
