Good morning! I hope you are enjoying your week so far. We had a busy weekend with work but enjoyed Sunday with some friends for Cinco de Mayo. << America’s excuse to drink Margaritas and eaten Mexican food more than we already do.

Flavor & Finds

Sunday morning started out with some fresh juice, pitcher courtesy of my sweet sister.

And fresh flowers from Old Time Pottery. I’m so excited for these babies to take over the flower beds.

Cinco de Mayo was inspired by How Sweet Eats Strawberry Margarita Recipe. I have an affinity for Margaritas, especially flavored ones. So when I saw her recipe, I knew I had to try out the recipe. As always, I needed to “test” it for you guys, just to make sure it’s good 🙂

Our friends Brittany & Matt invited us for a Cinco de Mayo get together at their house on Sunday and I brought my other favorite mexican food love: guacamole.  I don’t ever say no to a bowl of guacamole, even if it’s pre-packaged in a squeeze packet, I’ll eat it. Squeeze it on a chip, spread it on a wrap, eat the wrapper, you name it.

But I went fresh this time:

Fresh Life Guacamole

Serves 4-6 people

  • 4 Ripe Avocadoes
  • 2 Limes
  • 3 Tomatoes
  • 1/2 Cup of Chopped Cilantro
  • 1/2 Yellow Onion
  • 2 Cloves of Garlic
  • 2 Tsp of Salt

Chop up the tomatoes, cilantro, onion & garlic. Cut and pit the avocados, scooping out the contents into a large bowl. Mash the avocado with a fork until it’s a smooth mixture, although I like to leave some chunks for texture. Add in the chopped vegetables and then squeeze the juice of (2) limes on top. Mix in the salt and stir it all together. Serve with Chips or Veggies, or just grab a spoon and eat 🙂

Then I went fresh with some Strawberries (2 for $5 at Publix!) and followed Jessica’s recipe for Strawberry Margaritas.

Also, who knew Simple Syrup was so easy to make? Definitely going to make it for more drinks in the future.

Once I finished in the kitchen, we made our way across the bay to the fiesta. A nice Mexican spread was served.

Our fun hosts, Brittany & Matt!

Brittany & I! The weather was so beautiful and a perfect day for a party.

To the patio we went! The bottom left is the Strawberry Margarita << soooo yum.

I love getting together with friends outside on a patio, especially when the weather is warm and beautiful!
