Good morning! Wednesday is upon us which means I have a billion things to do before I head out of town tomorrow morning. My dear friend Victoria’s wedding weekend is finally here! And I’m so excited to celebrate her and see great friends. Plus I’ll get to see my family for a day- great days to come.

I wanted to stop by for What I Ate Wednesday and share two flavors. First, thank you to Jenn for this link up, it’s always a fun one!


Last week I shared a recipe I was drooling over from Ambitious Kitchen << You can find all the details there.

I was a little skeptical of the garbanzo beans and told you I would “taste-test” it for you. I’d hate for you to try a dessert recipe only to find out it tasted like beans.


Instead of chocolate chips I just chopped up 1/2 of this cacao baking bar.


You basically throw everything (except chocolate) into the food processor and blend. Then you pulse in the chocolate at the end.


I baked mine for 25 minutes at 350 and they came out with the right consistency of a chewy bar.

These were kind of dangerous to have in the house. I need to have girl friend neighbors to share with.


Well I’m here to tell you people- they don’t taste like beans. At all. They actually taste amazing. Like I can’t believe they are only 120 calories a bar amazing.

I lightened the sweetness by reducing the Maple Syrup to 1/4 cup instead of 1/3 cup and I thought they were sweet enough. Try them, you won’t be disappointed. This also got me thinking about brownies..

I also whipped up an easy-peasy crock pot recipe for you.

3 Ingredient Crockpot Chicken

  • 1 16oz Jar of Mild/Medium Salsa (depending on your spicy level)
  • 1 can of Black Beans
  • 1 lb of Chicken Breasts
  • Seasonings, 1 tsp of each: Salt, Pepper, Garlic Powder, Chili Powder, Paprika

Layer in order from top to bottom above, in your Crockpot. Cook on high for 4 hours. Make sure chicken is cooked throughout before inhaling eating.

This recipe is super simple but amazingly delicious. You can mix it up with Mango Salsa for a sweet factor too!


I served mine with my favorite grain free bread from Elena’s Pantry. This stuff is the bomb.
