Good evening friends! More like Good night right? It’s almost 10:30pm here as I’m writing this to you and we just finished these tasty burgers that I am bringing to you. Night’s have been late around here as work is busy and we both hit up the gym around 7:30 and don’t end up eating until 9. Buuuut… good food is eaten none the less πŸ˜‰


For today’s What I Ate Wednesday, I failed on the green front again. But I just love to link up to this WIAW feature with Jenn @ Peas & Crayons so here we go.


I did have a Green Salad for lunch but that goes un-pictured as it was scarfed down quickly while at work. For a pre-workout snack I had this delicious mix:


Banana Surprise

  • 1/2 Banana
  • 1 Tbsp of Shredded Coconut
  • 1 Tsp of Almond Butter
  • 1/4 Tsp of Cinnamon

This was a great pre-workout snack to give me fuel for a kick booty workout. It’s right around 125 calories and kept me going!

I did manage to whip up this recipe below in between work and the gym. I wanted everything to be prepped and ready to go when I got home from the gym so all I had to do was cook it!

Couscous, Cumin & Curry Turkey Burgers

So I knew I was making Turkey Burgers tonight but wanted to use some of the leftovers from the week in the mix. I am heading out of town Friday morning for my great friend, Victoria’s bachelorette Party and knew I needed to use up items before I left. I know Darin won’t be whipping up anything but Cereal and Pizza while I’m gone πŸ˜‰

Open the fridge, look around and decide on: Leftover Couscous, Red Pepper and Ground Turkey + Seasonings


  • 1 lb. of Ground Turkey
  • 1 Red Bell Pepper
  • 1/2 Cup of Cooked Couscous
  • 2 Garlic Cloves, minced
  • 2 Teaspoons of Olive Oil
  • 1 Tsp of Curry Powder
  • 1/2 Tsp of Ground Cumin
  • 1/2 Tsp of Sea Salt
  • 1/2 Tsp of Pepper
  • 1/4 tsp Paprika
  • 1/4 tsp Cayenne Pepper


Chop the Red Belll Pepper up and add to a pan with 1 tsp of Olive Oil. Add in the minced Garlic and seasonings and cook on medium heat for 3-4 minutes. Remove from heat and mix in with the Ground Turkey and Couscous. Form into 5 patties and cook on medium heat in 1 tsp of Olive Oil, flipping every 4-5 minutes until cooked throughout. There should be no pink left in the meat when they are done. Enjoy plain with a side of fries or add to a wheat bun with lettuce & tomato!


Chop up the bell pepper.


Add the olive oil, bell pepper, garlic & seasonings to a saute pan and cook for 3-4 minutes until the pepper and garlic have softened.

Mix the Ground Turkey, Couscous & Pepper/Seasoning together.

Form into (5) Patties.


Add (1) Tsp of Olive Oil to a saute pan and cook the patties until the meat is brown throughout the middle, no longer pink.

Best if served with a side of Lauren’s Paleo Steak Fry’s with Arby’s Style Seasoning. These were cooking away while my burgers were frying up.
