Good evening! I hope you all enjoyed your holidays. I have yet to upload my pics from the week or even process the last few days but I’ll be back with a re-cap for you soon! Until then, I thought I’d share a new recipe with you I made last week. It will warm your soul and stomach. Enjoy!


Quinoa Turkey Chili

(Also can be made Vegetarian by opting out the Turkey and would still be packed with protein from the Quinoa, Black Beans & Kidney Beans.)

Serves 8

  • (1) lb of Ground Turkey
  • (1) 15oz can of Black Beans
  • (1) 15 oz can of Diced Tomatoes
  • (1) 15oz can of Kidney Beans
  • (1) 5oz can of Green Chiles
  • (1/2) Cup of Dry Quinoa
  • (1) 32oz container of Chicken Broth
  • (2) Squash
  • (2) Zucchini
  • (2) Tbsp of Cumin
  • (2) Tbsp of Chili Powder
  • Salt & Pepper to taste
  • Cilantro for garnish

Chop up your squash and zucchini into bite size pieces.

While you cook your ground turkey, drain your beans and add them to a big pot along with the chicken broth, quinoa, green chiles, vegetables and seasonings and cook over medium heat for 20 minutes.

Add in the cooked ground turkey and tomatoes and let simmer on low for 15-20 minutes.

You can always let it simmer for longer to soak up all the flavors but I don’t have patience when it comes to waiting for food. Once I felt the flavor was good enough, I poured mine into a bowl and topped it with some fresh cilantro.

I loved this soup and my husband couldn’t quit eating it! It was especially great because he had a cold all last week and he ate it everyday. Whenever the weather starts to get cold like this, all I want to do is curl up with a hot bowl of soup. Why not make a pot and have it for the week ahead? That’s what we did last week and it was great for lunch. I hope you enjoy!
