Good morning! Happy Friday! The weekend is here and I am so excited to do nothing. This is the first weekend I have made no plans except to spent time with my husband. I forgot to mention that he didn’t come to the mountain house with us as he was hunting down in south Georgia last weekend. He loves to hunt and spend time outside this time of year.
We are planning to visit a new restaurant, explore a new outdoor spot and go to church. A great relaxing weekend, plus I have a messy room to tackle as the chair in my room has turned into a closet. Don’t you love how you put a cute oversized chair in your room to “sit” in and it slowly becomes the catch-all spot for a jacket, scarf or random stack of papers. Oh, just me?
My morning started out with a warm cup of coffee + cream and a beautiful fall morning here on the farm. I’m about to head to work but wanted to stop by with some link love.
Also wanted to share my newest love, a black & grey infinity scarf from Target. Only $20 and is HUGE. Like if I unwrap it, it goes down to my knees huge. I love it and want to live in it. I have a weakness for scarves and all of mine are packed into my storage unit, never to be seen until next year. I guess that means I have to buy new ones right?! 😉
As I’ve mentioned before, I am getting my butt kicked by Tina in Best Body Bootcamp. There will be a new session starting in January and you need to sign up for it. I know there are a lot of you out there who will have that, “Oh, 3 slices of pumpkin pie was too much?”, feeling and want to get back at it! The fact that we still have 4 weeks of the session left is so great for motivating me at this time of the year! We leave Tuesday morning to start Thanksgiving with his family and we don’t come back until Sunday. That’s 6 days of food people. But having workouts already planned is perfect because I WILL be hitting up the gym.
Speaking of, I love my gym. I was always an L.A. Fitness girl when I lived in Atlanta but since getting married I’ve found that Snap Fitness is great for those who move and don’t want to have to cancel contracts. You can usually find one in big cities, even small ones! There is one in Moultrie where Darin’s family is from and we will be going there over Thanksgiving. It’s 24 hours and you scan your card to get in. Also you can scan your card at any Snap Fitness around the U.S. for free! We had a membership in Florida and when we moved back to Georgia we just scanned in here in Newnan. It’s been great.
Plus, look at how busy it was last night at 7pm…
Yep, that’s right, I had the whole place to myself! I can literally do cart wheels in here and no one would stare at me. And it’s like this at most Snap Fitness’s.
They have great equipment.

Speaking of, I had to use the Stability ball last night for my Best Body Bootcamp workout and my hamstrings are SO sore today. I worked it out last night!
On Wednesday I did a 4 mile interval run (as prescribed) and on top of the core workout Tina gives us, I came up with an extra set to give my abs some more burn!
This is a 180rep Ab workout that will work different sections of your core and give you a great workout. You can add this to your usual routine or tack it on the end of a cardio session! Do 15 reps of each exercise and repeat 2x for the full 180 reps. You can find links below for images of the exercises. For the Plank with Leg Lift, alternate lifting legs for each rep.
I haven’t been doing a lot of recipe experimenting over here lately. Work has been constant as I work from 7-6:30 then go and workout until 8, just in time to get home and eat dinner, shower and go to bed. Therefore I’ve been experimenting with other bloggers recipes. I’m sharing with you Savory & Sweet.
This one’s from Juli at PaleOMG. I love her recipes and her blog because she’s hilarious. It’s called Enchilada Chicken Stew and is super easy for those of you who work all day and want to come home to a ready meal! Click over to her site for the recipe.
I woke up at 6am Monday, put all the ingredients in the crock pot and had my mom turn it on at 8am. It cooked on low for 10 hours and was ready at 6! The chicken was practically shredding itself from being so tender. The whole house smelled like good mexican food when I got home from work.
I sliced up some fresh Avocado for a topping.
I cooked black beans on the side and I had those as a base and Darin had his over black beans and rice. It was SOO good. I’m not exaggerating when I say this is the best meal I’ve had in a while. The flavor combos were delicious. Sorry for the low quality iPhone pics.
One of my weaknesses is buying protein bars from the grocery. I love trying out different flavors and don’t even let me walk into that aisle at Whole Foods. Who knew you could spend $5 on one bar?! I do love the seasonal Clif Bars and of course Sarah at Peas and Thank You has a recipe for them! Why not make them without all the filler stuff?
I changed up the recipe for these Gingerbread “Clif” Bars by using Spiced Apple Butter.
It’s crazy that you can make “frosting” with vanilla protein powder, almond milk & stevia.
