Good afternoon! I hope you guys are having a wonderful Monday. Surprisingly peeling myself out of bed at 7am wasn’t terrible this morning. On Saturday night I went to sleep at 11pm and woke up at 11:30am!?!? This never happens so I think I caught up on some much needed sleep.
As promised, this is the 2nd week of workouts that I will be sharing with you. Tomorrow, Thursday and Saturday will be your workouts. I will test all the workouts before I share them with you, I hope they will be challenging! I’m off to work on the workout for tomorrow, I will post it in the morning for you!
I wanted to share my recipe for dinner last night from my Weekly Meal Plans.
Southwest Turkey Burgers
- (1) Lb. of Ground Turkey or Chicken
- (1/3) Cup of Black Beans
- (1/3) Cup of Whole Kernel Corn
- (1/4) cup of Green Chiles
- (1) clove of garlic
- (1/4) cup of chopped Cilantro
- (1/2) cup of chopped Purple Onion
- (1) Tbsp of Cumin
- (1/2) Tbsp of Chili Powder
- (1) Tsp each of Salt & Pepper
- (1) Avocado- garnish
- (1) Tomato- garnish
Chop up the onion, garlic and cilantro in a mini chopper or by hand.
Add all ingredients including chopped vegetables and ground turkey to a bowl and mix together.
Form the mixture into (4) patties and cook in a non-stick pan with (1) tbsp of olive oil.
Once the patties are cooked all the way through (no pink inside), add the burgers to a wheat thin or a bed of lettuce. Top with Avocado and Tomato for a great addition to Southwest Flavor.
These burgers were very flavorful and had a Southwest Flavor without a spiciness. If you wanted to kick up the spice you could add some cayenne! I hope you guys enjoy!
