Good morning friends! It’s Thursday! The weekend is upon us and I’m so excited to see some of my close girl friends tomorrow. We will be soaking up the sun and sharing stories, it’s been a month since I saw them last- pictures to come from our weekend!

It’s Thirsty Thursday this morning and I have a new smoothie recipe for you below, but first I wanted to re-cap dinner last night to show you how we are sticking to our weekly meal plans! We actually switched up dinner plans and made Thursday nights dinner on Wednesday.

Last night for dinner was Spicy Turkey Burgers with Sweet Potato Wedges on the side. Watch me color code those babies.

Spicy Turkey Burgers

  • (1) can of Diced Green Peppers
  • (1) green onion chopped up
  • (2) tsp of cumin
  • (1) tsp of chili powder
  • (1) tsp of sea salt
  • (1) lb of ground turkey

Mix all ingredients together and form into patties. You can tell that I really wanted to make these patties beautiful…

After working out sometimes the last thing I want to do is make dinner (let’s be honest). So I kind of halfheartedly threw this babies together and slammed them in the pan. I cooked them in some olive oil on medium heat for about 15 minutes until brown inside. Make sure they aren’t pink! These are not medium rare bison burgers.

These burgers are best served with some avocado and if you are really feeling adventurous- homemade guacamole.

I sliced up one sweet potato and added a tsp of olive oil and some salt before baking them at 400 for 15-20 minutes until crispy. Side note: 1 Medium Sweet Potato is only 100 calories!

I served my turkey burger on a bed of lettuce and the husband had his on a wheat thin bread.

Thirsty Thursday is here and this was the smoothie I had for breakfast this morning. It’s refreshing and flavorful!

Coconut Banana Sunrise

–Serves 2–

  • 1 banana
  • 2 tbsp of shredded coconut
  • 1 tsp of coconut oil
  • 1 scoop of vanilla protein powder
  • 1 cup of milk
  • 1 cup of ice

Blend all ingredients and serve up! If you have a pretty straw, I would suggest using that. I need to buy some straws, it makes a smoothie more appealing.
