Happy Memorial Day! Thank you to all of the soldiers who have fought and continue to fight for our country. Also thank you to all the families who support them and continue to encourage them!

We had our friends Ashley and Cord come into town and we explored Ft. Lauderdale and Hollywood. Here are some pics from the weekend:

I ate and drank waayy too much this weekend- but it was so fun! I do however feel gross and am starting this week off with a fat crushing workout. At the gym I started off with a 10 minute warm-up on the treadmill followed by the following workout:

I challenge you to do this workout and plan your workouts out for the week. I will have different workout ideas for you throughout the week. Get your body moving!

After blogging about my favorite salad toppings on Friday, I saw today that Angela over at Oh She Glows was challenging everyone to The June Salad Challenge- one salad a day. So I will be posting my salad a day pictures and giving you ideas as I come up with new ones. You should join the challenge! Visit her site for more details. Here’s my first Salad-a-Day.

I made a Fresh Citrus Dressing:

Juice from (1) orange

Juice from (2) limes

(2) tbsp of Apple Cider Vinegar

(1) clove of garlic- minced

(1) tsp of organic maple syrup- can be omitted, adds sweetness

(1) tbsp of extra virgin olive oil

I then put together this fresh salad, it was refreshing and full of protein.

(2) hardboiled eggs, (2) tbsp of sliced almonds, (1/2)c blackberries, 1 orange segmented and 2 cups of lettuce

Add the citrus dressing on top and voila! Refreshing citrus salad.

While exploring downtown Hollywood, Florida with our friends, we decided to try out Spice Restaurant and Lounge.

Darin and I- I have a little forehead shine going on there, it was hot.

Cord and Ashley, such a cute couple.

Coconut Mojito for me 🙂

We then had some Chicken and Beef Skewers for an appetizer which were awesome.

We followed it with a Seafood Combo Platter we all shared for our entree. It included Salmon, Shrimp, Yucca Potatoes and more. So delicious.

Downtown Hollywood has a lot going on at night and I definitely recommend stopping by for dinner, drinks or live music. We will be returning soon.
